Date and Pecan Loaf
First loaf of 2021 and it's packed with two of my favorites. It's sweet. It's delicious. And it makes a perfect breakfast (or a snack with your mid-day tea). Yes, I'm taking about a Date and Pecan Loaf.
The best thing about making a loaf is how easy it is. You simply combine dry and wet ingredients, fold in your flavors aka banana, chocolate, nuts and in this case dates and pecan, pour into a loaf pan and bake.
The recipe below will make one standard 9 x 5'' loaf. You can simply double ingredients if you're looking to make a second.
And when it comes to serving this bread...
Just like any other, you can enjoy a slice on it's own. But if you want to jazz it up, spread a good ol' slab of butter or a fun cream cheese spread that we're making below.
For me, the cream cheese spread took the cake. But try all three, and let me know your favorite.

Date and Pecan Loaf
Prep Time: 30 minutes
Cook Time: 1 hour
Total Time: 1 hour and 30 minutes
Serves: 1 Standard Loaf
1 cup chopped dates
1/2 cup boiling water
1/2 cup baking soda
1 3/4 cup all purpose flour
1/4 tsp ground cloves
1/4 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1 cup sugar
2 tsp vanilla extract
1/2 cup chopped pecans
Cream Cheese Spread:
6 tbsp cream cheese, softened
2 tbsp chooped dates
2 tbsp chopped pecans
1 tbsp milk
Grease and flour a 9 x 5 '' loaf pan. Preheat oven to 350° F.
In a medium bowl, mix boiling water and baking soda. Place chopped dates in a separate bowl and pour the water and baking soda mix over it. Set aside.
In a large bowl, mix flour, ground cloves, cinnamon, ginger and nutmeg.
In a another large bowl, beat butter and sugar together until crumbly. Then, beat in the egg and vanilla. Next, add the flour mixture from Step 2 alternately with the date mixture from Step 1 while stirring with a wooden spoon. Finally, fold in the pecans.
Pour the batter into the prepared loaf pan. Bake for 1 hour until golden brown and a skewer comes out clean.
Prepare the cream cheese spread by mixing all spread ingredients. Serve with the baked loaf.
