Cookie Dough Frosted Brownies

Happy cookie season friends! I know I'm 9 days late to ring in the cookie season. Sooo, to make up for it, I'm brining you a cookie AND a brownie recipe, all in one.
Say hello to my Cookie Dough Frosted Brownies!
These brownies are soft, moist, rich and melts in your mouth like a dream. And guaranteed to disappear in no time!
I've tried several different brownie recipes so far and none of them really met the flavors and the textures I was going for, like this one. I use a combination of cocoa powder and chocolate chunks to get a perfect brownie. I know a lot of recipes use chocolate chips but, I always buy slabs of chocolates and cut them to uneven pieces instead. I just find that it tastes so much better that way. And more chocolate = better brownies.
And the addition of a cookie dough to the brownie via frosting just takes it to a whoooooole another level. Making this frosting is also the best part about this recipe.
But, it is the hardest too... and no, I don't mean it's hard to MAKE. It's just hard to not start eating it non stop while the brownies come out the oven. Because, this frosting is beyond delicious and a snack on it's own.
To achieve the frosting texture using this cookie dough, we add icing sugar and heavy cream. And once the rest of the frosting ingredients are combined, we add a whole lot of chocolate chunks. In the recipe below, I specify 1/3 cup chocolate chunks but, you can add however much you like.

Cookie Dough Frosted Brownies

Cook Time: 35 minutes
Total Time: 1 hour 5 minutes
Serves: 12 Brownies
16 tbsp butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup flour
1/2 tsp salt
1 1/2 tsp baking soda
1/2 cup cocoa powder
2 cups chocolate chunks
8 tbsp butter
1/3 cup brown sugar
1/3 cup icing sugar
1/2 cup flour
1/2 tsp vanilla extract
1/4 cup heavy cream
1/3 cup chocolate chunks
Prepare a 9x9 baking pan with parchment paper. Preheat oven to 350 ° F.
First make the brownie base. In a large bowl, beat the butter and both sugars until creamy. Next, mix in the vanilla extract. Then, add the eggs, one at a time - make sure to whisk well after each addition.
In a separate medium bowl, combine the flour, salt, baking soda and cocoa powder. Then, add the dry ingredients to the wet and beat until well incorporated. Finally, fold in the chocolate chunks.
Spoon the brownie batter into the prepared baking pan and bake for 35 minutes.
While the brownies are in the oven, prepare the cookie dough frosting. In a medium bowl, beat the butter and brown sugar until creamy. Next, add the icing sugar and beat until smooth. Then, beat in the flour little by little. Once all the flour is incorporated, mix in the vanilla extract followed by the heavy cream. Finally, fold in the chocolate chunks.
Remove brownie base from the oven and let cool completely. Then, apply the cookie dough frosting on top, cut and serve.
