Coffee, Pecan, Walnut and Chocolate Blondies

Craving a brownie? And a cookie? And some chocolate? Oh and also a bit of pecans and walnuts? Andddd a warm cup of coffee?


What if I said, you can have ALL of it at the same time in one bite? Because we are about to whip up a rich and easy batch of Coffee, Pecan, Walnut and Chocolate Blondies (ouuff, what a mouthful) !




If a Brownie and a Cookie have a baby, you get a little Blondie - at least that's what I feel when I look at and taste a Blondie.


Blondies are ridiculously easy to make. They are rich, buttery, chewy and come in all kinds of flavors - Pumpkin Spice, Cinnamon Roll, Cheesecake, Red Velvet, Cookies and Cream, Peanut Butter and the list goes on.


And today, we are going for a multi flavor Blondie with our Coffee, Pecan, Walnut and Chocolate Blondie.


The first bite of these Blondies feel just like that first sip of your warm morning cup of coffee followed by a burst of chocolate and nut flavors. Oh and you can whip these guys up in just under an hour.


Just one tip - a critical ingredient in all Blondies is the brown sugar. That's what will ensure you get that rich taste. So, make sure to not swap it with white/granulated sugar.



Why are Blondies always compared to Brownies?


That's common question in the food world. Let's jump over to my Brown Butter Chocolate Blondie recipe over here for a minute to talk about it, shall we?!


Well, now that you're an expert (or close to it) on Blondies, let's get you baking some. Quick warning though... it's very possible to eat a whole batch of Blondies in one sitting because they are just SO SO good!

Coffee, Pecan, Walnut and Chocolate Blondies


Prep Time: 15 minutes

Cook Time: 40 to 45 minutes

Total Time: 1 hour

Serves: 12 Large Blondies


Ingredients:

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

11 tbsp unsalted butter

1 1/2 cups brown sugar

3/4 tsp salt

2 tbsp coffee (rtp)

1 egg

1 1/2 tbsp vanilla extract

1/3 cup toasted chopped pecan + 3 tbsp full pecans (divided)

1/3 cup chocolate chunks (Use any flavor you like. I use almond dark chocolate from Lily's Sweets)

1/3 up chopped walnuts


Instructions:


Step 1:

Prepare a 9'' x 7'' pan with parchment paper with an overhang. Then, preheat oven to 350° F.


Step 2:

In a medium bowl, combine flour and baking powder.


Step 3:

In a large saucepan/heat proof bowl over medium heat, mix the butter, brown sugar and salt. Once all butter has melted, remove from heat and stir in the coffee. Next, whisk in the egg and vanilla extract until fully incorporated.


Step 4:

Next, add the flour mixture to the wet ingredients, little by little. Once all flour has been added and mixed, fold in the 1/3 cup of chopped pecans, chocolate and walnuts.


Step 5: Spoon the batter into the prepared baking pan and spread evenly. Sprinkle/place the remaining 3 tbsp of full Pecans on top. Bake for 40 to 45 minutes or until a toothpick inserted comes out clean.
