Brown Butter Chocolate Blondie

If a Brownie and a Cookie have a baby, you get a little Blondie - at least that's what I feel when I look at and taste a Blondie.

Blondies are ridiculously easy to make. They are rich, buttery, chewy and come in all kinds of flavors - Pumpkin Spice, Cinnamon Roll, Cheesecake, Red Velvet, Cookies and Cream, Peanut Butter and the list goes on.

And today, we are going for a Brown Butter Chocolate Chunk Blondie.

I do have to warn you though - You may eat all in one sitting!

The key and critical ingredient in all Blondies is the Brown Sugar (and in this case, the Brown Butter as well).

Using dark Brown Sugar instead of light, will ensure you get that rich taste. And, what is Brown Butter, you ask?

Brown butter is simply regular Butter that is cooked to the point where the butterfat turns to a deep amber brown color. The more golden, the better for the Blondies.

Are Blondies similar to Brownies?

That's another common question in the food world (and one that I had as well) and the answer is yes but, no. Brownies depend on Cocoa Powder or (melted) Chocolate for flavor and color, and are often frosted - unlike Blondies. Blondies are lighter in color for this reason, and are hardly ever frosted because they are sweet all on their own.

Okay, now that we got all that out of the way, let's get to baking - shall we?

Brown Butter Chocolate Blondie

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Serves: 16 Blondies


1/2 cup unsalted butter

1 cup dark brown sugar

1 tsp vanilla extract

1 egg

1-1/4 cup all-purpose flour

3/4 tsp salt

1/2 tsp baking powder

1/2 cup chocolate chunks


Step 1:

Preheat oven to 350° F and line a 9x9 square pan with parchment paper - make sure to leave an overhang to make it easier to remove the Blondies once baked.

Step 2:

In a small skillet over medium-low heat, heat the butter and continue stirring until the butter turns golden brown. Remove from the heat and pour into a large bowl. Set aside to cool (about 10 minutes).

Step 3:

Once the browned butter is cool, mix in the sugar, egg and vanilla. Stir using a wooden spoon until combined.

Step 4:

Then, add in the flour, salt and baking powder. Mix until no more flour pockets remain. Finally, fold in the chocolate chunks (I use dark chocolate but you can use any).

Step 5:

Spoon the batter to the prepared baking pan and bake for 25 minutes. Remove from oven, cool and cut into squares before serving.
